This converted music hall (once home to legends such as Edith Piaf and Yves Montand) is a genuine tower of Babel. Take a seat at one of the tables decorated with situationist mash-ups of popular culture icons, borrow a book (there’s a collection of Mills & Boon novels) or talk to your fellow drinkers. You have no idea who you might end up striking up a conversation with – a conceptual artist, the local Arab butcher or a Chinese lighter hawker. The coffee is strong, the Mojitos are more than potent and there’s just no where quite like this on the planet.

Of all the historic haunts, this is our favourite for its elegantly poured beers in long glasses, served by waiters wearing black waistcoats and long white aprons. Hemingway sang its praises in A Moveable Feast and today its faded glamour is neither too faded nor too glamorous but simply perfect. Stellar brasserie fare like pork knuckle, too.

In 12th century France, an oubliette (deriving from ‘oublier’, to forget) was where you put prisoners to forget about them. Nowadays, bohemian Parisians and travellers alike bring their troubles to this crowded, cobbled dungeon to forget about them. Every night, the beguiling strains of live jazz music intermingle with the subterranean glow of conversation. Let the heady champagne warmth of a Kir Royale intoxicate your senses into a state of sweet ‘dis-remembrance’. Guillotines and trapdoors remain as a sobering testament to the Caveau’s gory past. Beware those who try to leave, however; there’s no escaping an oubliette.
